The First Bite That Made Me Cry This is what I learned from my Trash Can Lasagna: brilliance is often hidden in leftovers. It started the day after the holidays. My fridge looked like a crowded airport terminal—everyone trying to board a flight home: collard greens, roasted chicken, dressing, sweet potatoes, cavatappi mac ’n cheese, homemade Alfredo, and some micro-kale holding on for its dear leafy life. I decided to stack them. Every last leftover. Layer upon layer, flavor upon flavor. No rules. No snobbery. Just honesty. When I slid my fork into the first bite, the emotion surprised me. I cried. Not because it was good (it was dangerously good), but because it tasted like comfort, like—the same feeling you get sipping hot cocoa, or a soothing cup of tea, or dipping your favorite cookies into ice-cold milk. The sweet potatoes brought depth. The cavatappi mac ’n cheese brought creamy swagger. The collard greens anchored the dish with soul. The Alfredo tied it all together like a peace treaty signed in butter and parmesan. It was messy magic. And it whispered something profound: There is beauty in combining what we usually separate.
